ARUNA ANTONELLA HANDA, PhD
I was trained in my Italian mother’s kitchen, where everyday she would cook an amazing dinner, often with home-baked bread and exquisite presentation. She is an adventurous cook, who prepares not only Italian dishes but also cuisine from around the world. My sense of food was enhanced by my travels and stays in Europe, Asia and the Caribbean. In Calcutta, I recall delighting in the tea parties my grandmother would host. I can still smell the aromas of the pakoras.
I've been obsessed with the future from a young age. My earliest drawings were of rocket ships. Didn't want my driver's license at 16; was waiting for flying saucers. Still am. I created Alimentary Initiatives in 2011 to experiment on the future of food. These days, I find myself thinking a lot about food distribution, future kitchens, and fungi and algae. I am happiest in that space with theory and practice collide, and so love to write, create and work in the future food space, where we can taste our research.
